“Mama, I’m hungry and I want meatballs now”, requested my 4 year old.

I didn’t plan to make meatballs and I didn’t feel like cooking so that’s when I took my Instant Pot out. The Instant Pot is seriously the best invention ever, well maybe not ever but it’s amongst the top ones.

It has made my life so much easier! I love the idea of dumping lots of ingredients inside a pot, let it cook and have a meal ready in a just a few minutes. Because it’s seriously that easy!

I love that I don’t have to check on the food while it’s cooking. You don’t have to worry about food burning and you don’t have to stand next to your stove stirring a pot. It’s a lifesaver!

We use the Instant Pot several times a week, especially on those days when I don’t feel like cooking or when I realized I have to feed my family soon and I forgot to thaw meat. You can cook frozen meat in the Instant Pot and have it ready to eat in about 20 mins – it’s amazing.

So if you’re reading this, I hope you have an Instant Pot and if you don’t have one yet, do yourself a favor and get one right now!

OK, enough praising the Instant Pot, let’s get back to our recipe…Making meatballs in the Instant Pot is my favorite way to cook them because they turn out perfect and so tasty! Plus, since I don’t have to keep stirring them they don’t fall apart.

I usually make one big batch and we eat it for a couple of days. We eat meatball subs one day and spaghetti and meatballs the next. Both dishes are great to eat a long with a salad – my favorite is this cucumber one.

When making the meatballs feel free to add other spices to your meatballs, it won’t affect the recipe.

Instant Pot Meatball Subs Recipe

Try to stick to organic ingredients if possible.

For Meatballs:

  • 2 lbs ground beef
  • 1/2 white onion diced
  • 1/2 cup bread crumbs
  • 2 eggs
  • 1 tablespoon minced garlic
  • 1 bunch of cilantro (optional)
  • 1 teaspoon salt
  • 1 teaspoon pepper

For Sauce:

  • 1 large can tomato sauce
  • 1 small can diced fire roasted tomatoes
  • 1/2 white onion diced
  • 6 chopped leaves of fresh basil

Instructions:

In a large bowl, mix bread crumbs, eggs, meat, onion, garlic and spices. Mix well with your hands until all ingredients have are well combined.

Roll small amounts of the mixture into balls and set inside the instant pot.

Once you’re done making all the meatballs, pour the tomato sauce, the fire roasted tomatoes and diced onion inside the Instant Pot.

Then chop the basil and sprinkle it on top of all the ingredients.

Set your Instant Pot to high pressure and cook for 15 minutes. Once it’s done, do a natural release, which means, let the Instant Pot depressurize before opening the lid.

Serve on organic hoagie buns (or whichever bread you prefer) and eat! It’s that simple.
